On their way home, they stopped at a shop in a border town and discovered unique varieties of honey. They loved the flavours so much that they returned annually to buy more. Tim’s girlfriend suggested selling the honey at farmers’ markets one day. They set up a website and began selling online, eventually growing their business by attending organic fairs and connecting with beekeepers.

This spontaneous mountain trip led to a successful honey business for Tim and his girlfriend.

One of Tim’s favourite memories is climbing Mount Olympus. He was amazed by how big the mountain is and its special environment near the sea, which makes the land change quickly and creates different climates.

Because of this, there are many plants and flowers on the mountain that you can’t find anywhere else. This makes the honey from there really special. Tim gets his honey from a beekeeper named Demetrius, whose honey has won top awards in London twice.

Mount Olympus makes amazing honey that Tim thinks could be fit for the gods. He describes the mountain as mysterious, often covered in clouds. Climbing it with a beekeeper was a thrilling experience for him.

How Honey Is Graded and Rated

Tim mentioned something interesting about the honey awards. You might have heard of Manuka honey, which has different grades based on its antibacterial properties. For a while, Manuka was thought to be the best at this, but Tim’s tests showed that dark honey, like Forest and Tree honey, could be just as effective, if not more so.

Then there are taste awards, where judges rate honey samples based on how they feel and, most importantly, how they taste. It’s like wine tasting, with judges evaluating factors like flavour longevity and different taste notes.

Tim has a thorough process for selecting honey suppliers to ensure quality and authenticity. He contacts beekeepers, asks about their varieties, and samples their products. He prefers certified organic honey, though not all beekeepers can afford the certification. About 90 percent of the honey Tim sources is organic, with certifying bodies conducting surprise visits to ensure hives are in uncontaminated areas.

Tim values the story behind the honey as much as the process. He recounts an adventure in Greece with a local beekeeper and his uncle, where they ventured into the mountains to find hives in a remote forest clearing. Despite the presence of bears, Tim marveled at the purity of the surroundings and captured footage of bees collecting sap from fir trees. The honeycomb he sampled was exceptional, with fruity and treacly flavors. In England, tests revealed its antibacterial potency exceeded that of Manuka honey.
